Gruyre cheese and Westcombe Cheddar |
Fry off some chopped onion and leek with a little salt and pepper. Mix the cheese with the other ingredients and put between 2 slices of sourdough. |
We cook ours in a pan under a brick which compresses it and cooks it evenly (You can put a little foil in between the brick and the toastie) |
After a few minutes turn the toastie's over to brown on both sides |
